The secret of a tasty dish

Have you ever wondered what the secret of a tasty meal is? Seasoning exudes wonderful aromas which enhance the natural flavours and tastes of home cooked food. Even the simple recipes containing herbs, spices and freshly grown ingredients create the most delicious meals.

Following this secret, we proudly offer high quality dishes using fresh herbs, fruit and vegetables from our garden in Yaliskari. Yaliskari is an unspoiled and picturesque bay between Kalami and Agni. During the summer season, Dimitris supervises and cultivates the garden with a selection of herbs such as parsley, basil, mint, rosemary, a selection of vegetables such as broccoli, cabbages, potatoes, onions, aubergines, courgettes, lettuce, cucumber, tomato as well as trees bearing plums, figs, pears, limes, lemons, oranges, walnuts and almonds. During the winter, the family collect the olives from 500 olive trees for the olive oil production which is necessary for the cooking and consuming it in salads.

Begin your meal with some of our mouth-watering hot or cold starters, and accompany them with a glass of wine or beer. Do not forget to sample tzatziki or olive paste, the tasty briam, baked feta cheese, village sausage and for those who enjoy seafood, we suggest taramosalata, octopus in vinegar, shrimp or mussel saganaki or fried sardines.

To accompany your main course, a salad is always a healthy and tasteful dish. The Greek salad is the most popular, whilst fresh boiled vegetables with olive oil and lemon are a great accompaniment to fish dishes.

For meat lovers, we would recommend that you follow on with the most famous Greek dish of Lamb Kleftiko which is very popular with our regular customers, or the traditional Corfiot dishes such as Rooster Pastitsada and Sofrito. The sophisticated blend of traditional Greek cuisine with Mediterranean flavors creates some of our most delicious dishes. Enjoy the meat of your choice grilled or cooked with the aromatic flavour of our fresh ingredients produced by the Greek land. A tender fillet steak grilled to perfection is always a delicious option; enjoy it cooked in its own juices or with one of our special sauces. Two of the most popular and delicious dishes of the traditional Corfiot table is Pastitsada and Sofrito.

Pastitsada is a very popular dish, originating from the Venetians. The traditional homemade Pastitsada is cooked with rooster, finely chopped parsley, salt and paprika. The red sauce is cooked with oil, cinnamon, cloves, salt and paprika. Pastitsada is served with long macaroni tubes. The recipe has delicious seafood varietions, such as the special dish, Lobster Pastitsada.

Sofrito is also very popular Corfiot dish in casserole, which originated in the Venetian times. It contains thin slices of veal in a thick, white garlic sauce, seasoned with parsley, salt, black pepper and wine or vinegar.

The taste of Sea on your dish! Fish and Seafood lovers will thoroughly enjoy the wide variety of fresh fish that is caught daily by George. Every day George searches the Ionian Sea on his fishing boats Nikolakis and Georgotzis for the best quality fish and seafood which you can enjoy cooked to your preference. You have the choice to taste the fresh fish prepared using traditional Corfiot recipes of Bourdeto or Bianco. For an extra special seafood meal, why not try one of the most famous and exceptional seafood dishes of Lobster Pastitsada or Scorpion Fish Bourdeto:

Burdeto is a fishermen’s dish cooked with either Scorpion fish or tope in a red spicy sauce made of spicy chilli pepper and spicy paprika, finished with lemon juice.

Bianco means ‘white’ in Italian. This recipe is a fishermen’s favourite dish. Usually it is cooked in a casserole with cod or tope and potatoes in white sauce of finely chopped garlic, parsley, lemon juice and black pepper.

Our Fishing Boats

The first fishing boat, Nikolakis, has its own history in the Georgotzis family.

Before the tourism exploitation in Corfu, the first job of Dimitris Katsaros was an engineer in cargo ships traveling around the world. After his last trip, he bought a small fishing boat for the family’s needs.

In 1980, Dimitris and his wife Frosso established their first tourist business in Kalami, a snack bar under the name “Kalami Beach”, which in 1984 progressed to a taverna – bar, the “Kalami Beach Taverna – Bar”.

Dimitris had already been fishing professionally with the small boat supplying the taverna with fresh fish. During fishing, he used to take with him his youngest son, George Katsaros, who loved joining his father in his “little journey”, learning from a very young age the art of fishing.

In 1995, when George returned from the special forces of the army, he was confident that the only job he ever wanted to do was fishing. The business had to be expanded, as the size of the boat was not satisfactory for the taverna’s needs. The fishing boat “Nikolakis” is bigger and organised with all the necessary equipment for the difficult and sometimes dangerous job of fishing. Fresh fish grilled or cooked, became the most delicious meal for the customers of the taverna. In 2010 the family welcomed the new fishing boat Georgotzis which is a modern, fully equipped boat for adventurous fishing. George sometimes leaves for days and almost every time he always returns with a really impressive catch. Tuna is a big fish that George supplies the taverna very often.

George is the soul of the boats, working with the knowledge, the love and the experience. He is considered as one of the most skilled and spirited fishermen in the area.

The fishing boats are in the sea all year round, (except a small period when they are out of the water, for general maintenance).

During the summer, George supplies his brother Nikos at the Kalami Beach Taverna with his daily catch of fish. In the winter, both brothers go fishing together and sell the fresh fish to the locals.

If you are wondering what happened to small fishing boat, Dimitris still owns it! His main job is the vegetation of the garden in Yaliskari producing fresh vegetables for the taverna, but he always finds the time to go fishing for white bait and sardines. Besides, who could not agree that these little fish are a delicious “meze” to start a meal?

Fishing is a different and unique experience every day. We welcome you to “Nikolakis” boat with captain Giorgos, who will introduce you to a typical fishing day.
